At Brandow Bakes, every loaf tells a story of wild fermentation, time, and community. What began in 2016 - with a sourdough starter gifted by my good friend Joel and a passion for feeding my family delicious, homemade food - has grown into something I'm excited to share with you.
When I'm not teaching at the University of Oregon or running around the state with my wife to watch kids' sports, you'll find me in my kitchen tending to my levain, shaping loaves, and filling our home with the aroma of fresh-baked bread. I believe in the simple magic of flour, water, and salt transformed through patience and natural fermentation.
Each Thursday, I mix small batches of sourdough bread, letting the wild yeasts and bacteria that have been part of our home since 2016 work their magic. After fermenting for 24 hours, each loaf is baked and delivered to a convenient location for you to pick up.
This isn't just bread - it's a practice in slowness, a testament to tradition, and most importantly, a way to bring something honest and nourishing to my table and yours. Welcome to my micro bakery. I'm grateful to share this journey, and these loaves, with you.
